Tallerken og muffins

Start wearing your sunglasses, go for a long walk and inhale the smell of summer. Enjoy a cold glass of lemonade with a Lemon-Rosemary Muffin on the side.

Lemon-Rosemary Muffins

  • 2/3 cup of olive oil
  • 3/4 cup of sugar (coconut, brown, white)
  • 4 eggs
  • 2-tablespoon rosemary (finely cut)
  • 1-teaspoon vanilla extract
  • 1 lemon and zest of it
  • Juice of ½ the lemon (grate off the zest first, then cut in half and use the juice too)
  • ½ cup of flour
  • 1-tablespoon baking soda
  • ½ teaspoon salt


How to prepare:

  1. Turn the oven at 180 degrees
  2. Mix liquid ingredients together (olive oil, eggs, lemon juice, lemon zest, sugar, rosemary, vanilla) in a bowl and whisk well
  3. Mix the rest of ingredients in separate bowl (salt, flour and baking powder) and whisk nicely
  4. Add the liquid ingredients into the rest and mix slightly to keep the effect of the baking powder
  5. Pour mass into a paper forms or muffin pan
  6. Cooking time around 17 minutes
